Lemon and Passion-fruit icecream

MMMMMMM....... Making this today while it is sleeting outside.
First separate the eggs ready for the ice-cream. With some of the leftover yolks make lemon honey (lemon curd). I used Edmonds recipe, a good old trusty NZ recipe.
 Then make the ice-cream using this recipe - three ingredients, how easy can it be!

Swirl the lemon curd and some passionfruit pulp through the mixture, put it into the freezer and try to wait!
Then eaten in style in the hot tub.

It must be summer

This is the earliest we have had strawberries every. Enough for dessert. We are having these gorgeous red strawberries with homemade Feijoa and Ginger ice-cream ( just added homemade jam to the recipe here).

The strawberries are in the new garden bed that I dug and built this winter and I have gone back to being traditional for planting. I used black weed mat and it certainly not only represses weeds but the soil under is so warm.

What I've been making this week for a treat

My cousin Amanda's ice cream. It is absolutely gorgeous, half or under the price of the supermarket icecream (but soo much better). Lovely vanilla using real vanilla pods is what is being made and consumed at the moment.

Amanda is raising a house cow so even the cream for her will be from the land. For me only the eggs are. But a few eggs, a cup of caster sugar, some real vanilla and some whipped cream and you get 1.5 litres of deliciousness.

Woo hoo, A holiday with no kids for 11 days. Bliss, relaxing and warm! BTW it was an early 20th wedding anniversary present to ourselves....
